Mexican Spiced One Pot Rice
If you’re looking for a quick yet flavourful dinner, this Mexican One-Pot rice is for you. It’s perfect for busy weeks, and guaranteed to be loved by the entire family.

Ingredients
One-Pot
- 1 yellow onion, finely chopped
- 2 red chilli, finely chopped
- 2 garlic cloves, finely chopped
- 2 tbsp neutral oil
- 1 tbsp ground cumin
- 2 tbsp ground paprika
- 2 tbsp tomato paste
- 1 tsp chili powder
- 1 cups rice
- 4 cups vegetable broth
- 230 g black beans, strained and rinsed
- 230 g kidney beans, strained and rinsed
- Salt to taste
Toppings
- 2 avocados, cubed
- 1/2 cups sour cream
Instructions
- Heat oil in a large pot to medium heat. Add the onions, chilli and garlic and cook, stirring frequently, until onions are softened, about 5 minutes.
- Add the tomato paste, cumin, paprika, chilli powder and rice, stirring frequently, for about 3 minutes.
- Add the vegetable broth, black beans and kidney beans, and turn up the heat to bring to a boil.
- Reduce the heat to low and cover the pot to simmer until all the liquid is absorbed and rice is tender and soft, about 20 minutes. Season with salt to taste before topping with avocado and sour cream.
