Minty Green Pea Coconut Soup
This soup is quick and easy to make, filling, healthy and packed with fresh flavours. Can be served as a light lunch or dinner.

Ingredients
Soup
- 1 tbsp coconut oil
- 1 yellow onion, roughly chopped
- 1 cup green peas
- 1 green chili, roughly chopped
- 1 tbsp ginger powder
- 1/2 cup coconut milk
- 2 cups vegetable broth
- 230 g white beans
- 20 g fresh mint
- salt to taste
Toppings
- 40 g pine nuts, toasted
- 1/2 cup green peas, thawed
- 1/4 cup coconut milk
- a few fresh mint leaves
Instructions
- Heat a sauce pan with coconut oil to medium heat. Once the oil has melted add onion and cook until slightly transparent, about 5 minutes. Add peas, chili and ginger powder stirring until well combined. Add in Vegetable broth and coconut milk and bring to a boil. Reduce heat, and leave to shimmer until peas are cooked, about 5 minutes.
- Transfer to a blender with white beans and mint and blend until smooth. Season with salt to taste.
- Serve the soup topped with pine nuts, extra peas, coconut milk and mint. Optional to also serve with toast.
