Mustard Lentil Stew

Mustard lentils that are creamy, flavourful, filling and easy to prepare. Made on the stove, and simply served with quinoa.

Tips:

If meal prepping, store the lentils and the quinoa in different containers. 
 Also goes well with some green leaves on the side.

Ingredients

Lentils
  • 460 g lentils, drained and rinsed
  • 1 tbsp neutral oil
  • 1 yellow onion, finely chopped
  • 1/2 cups white wine
  • 1 cups plant-based sour cream
  • 1 cups vegetable broth
  • 1 tbsp dried thyme
  • 1 tbsp dijon mustard
  • 1 tbsp whole grain mustard
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tbsp nutritional yeast
  • salt and pepper to taste
Other
  • 1 cups quinoa

Instructions

  • Cook the quinoa according to package instructions.
  • Heat a skillet to medium high heat and add the onion, cooking until fragrant.
  • Add the white wine and cook for another minute before adding the remaning ingredients (plant sour cream, vegetable broth, thyme, dijon, whole grain mustard, soy sauce, cornstarch, nutritional yeast, salt and pepper).
  • Lower the heat and leave to simmer until sauce is creamy. Adjust with salt and pepper to taste before serving.
