Noodle Salad With Peanut Dressing
This meal is simple but so delicious. Quick rice noodles and fresh vegetable tossed in the dreamiest of peanut sauces. Light and refreshing, yet so satisfying. You’ll definitely wanna make this recipe on repeat.

Ingredients
Dressing
- 1/2 cups peanut butter
- 1/4 cups soy sauce
- 3 tbsp cold water
- 2 tbsp sesame oil
- 2 tbsp lime juice
- 2 tbsp syrup
- 1 tsp sambal oelek
- 2 garlic cloves, minced
- 2 tsp ground ginger
Salad
- 180 g rice noodles
- 400 g white cabbage, thinly sliced
- 3 carrots, thin stripes
- 2 green onion, thinly sliced
- 20 g fresh basil, chopped
Other
- 60 g peanuts, chopped
Instructions
- Cook the noodles according to package instructions.
- Meanwhile, make the dressing by combining all ingredients (peanut butter, soy sauce, water, sesame oil, lime juice, syrup, sambal oelek, garlic and ginger) to a blender and mix until smooth.
- Add the noodles along with the chopped vegetables (cabbage, carrots, green onion and basil) and dressing to a large bowl. Gently toss to combine before topping with peanuts.
