Pan-Fried White Beans Wrap With Sun-Dried Tomato Cream

Creamy sun-dried tomato wrap that is ready in no time – this is lunching at its best.

Ingredients

Beans
  • 460 g white beans, drained and rinsed
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 2 tsp dried oregano
  • 1/2 tsp black pepper
  • salt to taste
Sun-Dried Tomato Cream
  • 1 1/2 cups plant based sour cream
  • 100 g sun-dried tomatoes, finely chopped
  • 3 garlic cloves, finely chopped
  • 1/2 tbsp lemon juice
  • salt to taste
Other
  • 150 g lettuce, chopped
  • 1 cucumber, cubed
  • 100 g cherry tomatoes, quartered
  • 1 red onion, thinly sliced
  • 4 large wraps

Instructions

  • Start by making the sun-dried tomato cream by adding all ingredients (plant sour cream, sun-dried tomatoes, garlic, lemon juice and salt) to a small bowl and mix until well combined.
  • Cook the white beans by heating a skillet with oil to medium heat. Add the beans and cook until slightly golden and crispy.
  • Stir in dried basil, dried oregano, salt and pepper. Cook for another minute.
  • To assemble, add sun-dried tomato cream, lettuce, cucumber, cherry tomatoes, red onion and white beans on to a large wrap before wrapping tight.
