Pear Salad With Walnuts And Wheat Malt
A fresh summer salad that goes quick and works perfect as a lunch. Both the chickpeas and wheat can be cooked in advance.

Ingredients
Chickpeas
- 460 g chickpeas, strained and rinsed
- 1 tbsp neutral oil
- salt to taste
Salad
- 1 cup wheat malt
- 4 pears, sliced
- 120 g mâche salad
- 60 g walnuts
Dressing
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1/2 tsp syrup
- salt and pepper to taste
Instructions
- Preheat the oven to 220 degrees celsius.
- Cook the wheat according to package instructions.
- Pour the chickpeas into an ovenproof dish. Pour over oil and salt and stir. Roast in the middle of the oven until crisp, about 20 minutes.
- In a separate bowl, mix all the ingredients (olive oil, lemon juice, syrup, salt and pepper) for the dressing well.
- While the chickpeas are roasting and the wheat is cooking, slice the pears, chop the walnuts and mix with the mache salad in a large bowl.
- When the chickpeas and wheat has finished cooking and cooled down, add to the pear, walnut and mâche salad and mix. Drizzle over the dressing and toss gently to combine.
