Quick Mushroom And Soybean Fried Rice
Mushroom fried rice is sometimes forgotten, but it’s really delicious. It’s full of deep umami flavour and ready to serve within 30 minutes.

Ingredients
Fried Rice
- 2 cups rice, cooked
- 250 g mixed mushroom, divided
- 200 g soy beans, thawed
- 4 garlic cloves, finely chopped
- 4 spring onions, sliced
- 2 tbsp sesame oil
- 3 tbsp parsley, chopped
- salt to taste
Soy Sauce
- 4 tbsp soy sauce
- 1 lime, zest + juice
- 2 tbsp tahini
Instructions
- In a small bowl, mix all soy sauce ingredients (tahini, soy sauce and lime, zest + juice) until combined and set aside.
- Heat a skillet with sesame oil and add the mushrooms, spring onion and garlic, and let cook until golden brown, about 8 minutes. Add in the soybeans and cook until heated, about 5 minutes.
- Add the rice and sauce, and stir to combine everything well. Let everything cook for another 5 minutes before seasoning with salt to taste. Top with parsley before serving.
