Quick Sun-dried Tomato Pasta
This sun-dried tomato pasta will leave you feeling satisfied and happy with its deep flavour and is besides super easy to make, ready within 15 minutes.

Ingredients
Pasta
- 500 g pasta, of choice
- 4 tbsp plant-based butter
- 5 garlic cloves, finely chopped
- 150 g sun-dried tomatoes, roughly chopped
- 1/2 cup reserved pasta water
- 80 g plant-based parmesan
- salt and pepper to taste
Instructions
- Cook the pasta according to package instructions.
- While the pasta is cooking, make the sauce by heating a deep skillet to medium heat. Add your butter and let it melt. Once melted add in garlic and cook until the garlic has softened, about 5 minutes. Add in the remaining ingredients (sun-dried tomato, pasta water, parmesan, pepper and salt). Mix everything well and let simmer on low heat for about 5 minutes. Add more water if the sauce gets too thick.
- Add the pasta to the skillet and combine with sauce.
