Quinoa Kale Salad With Lemon Mustard Dressing
On the fence about quinoa? This easy salad recipe will make you convert! Just trust that this one is a keeper.

This recipe is a lunchtime hero. It's brilliant for storing several days in the fridge, so you can prep it on the weekend and look forward to fresh, filling lunches all week!

Ingredients
Salad
- 1 cup quinoa
- 100 g kale
- 20 g almond, shaved
- 1 red onion, thinly sliced
- 230 g chickpeas, drained and rinsed
Dressing
- 3 tbsp olive oil
- 1 tbsp syrup
- 1 tbsp dijon mustard
- 2 tbsp lemon juice
- pepper, to taste
- salt, to taste
Instructions
- Start by cooking the quinoa according to package instructions.
- While the quinoa is cooking, prepare the rest of the salad by cutting off the thick stem of the kale and then roughly chopping the leaves. Thinly slice the red onion and mix with the kale, almonds and chickpeas in a large bowl.
- In a separate bowl mix together the ingredients for the dressing (olive oil, syrup, dijon mustard, lemon juice, salt and pepper.)
- Add the cooked quinoa and dressing to the bowl with kale and mix everything well.
