Red Wine Mushroom Stew

This Red Wine Mushroom Stew is perfect for a cozy family dinner that everyone will love! It makes a comforting dinner full of rich umami.
Tips:
Keep the mashed potatoes and stew in separate containers if meal prepping.

Ingredients
Mashed Potatoes
- 600 g potatoes
- 4 tbsp plant-based butter
- 1/3 cups plant-based milk
- 2/3 cups plant-based sour creme
- 2 tsp nutmeg
- salt to taste
Stew
- 750 g mixed mushrooms, quartered
- 1 tbsp olive oil
- 4 shallot, finely chopped
- 4 carrots, chopped in equally sized pieces
- 5 garlic cloves, thinly sliced
- 2 tbsp tomato paste
- 1 cups red wine
- 4 bay leaves
- 1/2 cups baby pickled onions
- 1 1/2 cups mushroom broth
- 2 tbsp soy sauce
- 20 g fresh thyme
- 1 tbsp lingonberry jam, or other sweetener
- salt and pepper to taste
- 1 cups plant-based heavy cream
Instructions
- Heat a large pot with oil to medium high heat. Add in shallots, mushrooms carrots, garlic cloves and tomato paste, cook until shallots are fragrant.
- Pour over the wine and let cook until wine reduces.
- Add all remaning ingredients (bay leaves, mushroom broth, soy sauce, fresh thyme, baby pickle onions, lingonberry jam, salt and pepper) except plant cream. Bring to a boil then reduce to simmer, covered, for 30 minutes.
- Pour in the plant cream and continue to simmer for another 15 minutes.
- Meanwhile the stew simmer, cut the potatoes into cubes. Feel free to peel your potatoes first or leave the skins on.
- Place the potato cubes in a large pot and cover with water. Boil the potatoes by placing the pot on the stove and turning the heat to high. Let the water come to a boil before reducing the heat to medium-high and continue cooking for about 10-12 minutes. The potatoes are done when they have little to non resistance left. Carefully drain out all of the water.
- Finish up the potatoes by mashing them to your desired consistency. Add the remaining ingredients (plant milk, plant sour cream, nutmeg, and salt) give it a good stir and combine until smooth. Adjust salt to taste.
- Serve the stew along with the mashed potatoes.
