Reddish Bowl With Mint Dressing

This quick bowl with mint dressing is delightful, light and fresh. The combination of veggies, beans and the fresh mint dressing makes the perfect summer recipe.

Ingredients

Dressing
  • 50 g fresh mint
  • 1/3 cup olive oil
  • 1 lime, zest + juice
  • 1 garlic clove, minced
  • salt and pepper to taste
Salad
  • 460 g white beans, strained and rinsed
  • 280 g cabbage, thinly sliced
  • 40 g reddish, thinly sliced
  • 120 g carrot, thin sticks
  • 160 g broccoli, cut into small florets
  • 1/2 batch green pea cream
  • 20 g cashews nuts, finely chopped

Instructions

  • Start by preparing the veggies (cabbage, reddish, carrot and broccoli). A mandolin is great for speeding up this step.
  • Make the dressing by adding mint, garlic and lime to a food processor. With the food processor running, drizzle in the olive oil, and process until combined. Season with salt and pepper to taste.
  • Add the chopped vegetables to a large mixing bowl and pour over the dressing. Toss around until everything is evenly coated.
  • Serve the salad topped with green pea cream and cashews.
