Roasted Vegetable Gnocchi Bake Salad

This baked gnocchi recipe is loaded with vegetables and drizzled with a fresh orange dressing. It’s a weeknight hero and come together in just about 30 minutes.

Ingredients

vegetables
  • 230 g chickpeas, strained and rinsed
  • 3 zucchini, chopped
  • 160 g artichoke hearts, drained and rinsed, then chopped
  • 500 g plant-based gnocchi
  • 4 shallots, thinly sliced
Citrus Dressing
  • 1/2 cups olive oil
  • 1/2 tbsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 cups orange juice
  • 1/2 tbsp apple cider vinegar
  • 4 garlic cloves, minced
Topping
  • 140 g arugula
  • 100 g plant-based feta cheese, crumbled

Instructions

  • Preheat the oven to 225 degrees and line a baking sheet with parchment papper.
  • Combine the dressing ingredients (olive oil, oregano, salt, pepper, orange juice, vinegar, garlic) in a small bowl and set aside.
  • To the sheet pan add chickpeas, zucchini, artichokes, gnocchi and shallots.
  • Drizzle the dressing over the ingredients on the pan and toss to ensure everything is very well coated. Bake for 25 minutes, tossing gently at the 15 minute mark.
  • Once baked, mix with arugula and feta cheese. Adjust with salt and pepper to taste and serve immediately.
