Satay Sauce With Tempeh Skewers

This sauce is so good - everyone will be begging for the recipe. Serve with fluffy rice and tempeh skewers for an authentic thai experience right in your kitchen.

Ingredients
Satay Sauce
- 1 cups peanut butter
- 400 ml coconut milk
- 1 tbsp red curry paste
- 1 tbsp sugar
- 1 tbsp soy sauce
- 1 lime, juice
Tempeh Skewers
- 400 g tempeh, cut in lengths
- 2 tbsp neutral oil
- salt to taste
- 12 skewers
Other
- 1 cups rice
- 60 g peanuts, roughly chopped
Instructions
- To a medium sized sauce pan, add peanut butter, coconut milk, red curry paste, sugar, soy sauce and lime, mix until well combined.
- Bring to a boil before leaving to simmer for 30 minutes. Adjust to taste before serving.
- Meanwhile, cook the rice according to package instructions.
- Cut the tempeh into length pieces and thread on skewers. Lightly salt the skewers before heating a sauce pan with oil to medium high heat. Cook the tempeh until golden, turning to cover all sides.
- Serve the skewers with rice, satay sauce and chopped peanuts.
