Satay Sauce With Tempeh Skewers

This sauce is so good - everyone will be begging for the recipe. Serve with fluffy rice and tempeh skewers for an authentic thai experience right in your kitchen.

Ingredients

Satay Sauce
  • 1 cups peanut butter
  • 400 ml coconut milk
  • 1 tbsp red curry paste
  • 1 tbsp sugar
  • 1 tbsp soy sauce
  • 1 lime, juice
Tempeh Skewers
  • 400 g tempeh, cut in lengths
  • 2 tbsp neutral oil
  • salt to taste
  • 12 skewers
Other
  • 1 cups rice
  • 60 g peanuts, roughly chopped

Instructions

  • To a medium sized sauce pan, add peanut butter, coconut milk, red curry paste, sugar, soy sauce and lime, mix until well combined.
  • Bring to a boil before leaving to simmer for 30 minutes. Adjust to taste before serving.
  • Meanwhile, cook the rice according to package instructions.
  • Cut the tempeh into length pieces and thread on skewers. Lightly salt the skewers before heating a sauce pan with oil to medium high heat. Cook the tempeh until golden, turning to cover all sides.
  • Serve the skewers with rice, satay sauce and chopped peanuts.
