Spicy Broccoli Bowl With Garlic Croutons

Nutty, flavourful and filling, here comes the perfect bowl to keep on repeat.

Ingredients

Dressing
  • 1/4 cups olive oil
  • 2 tbsp apple cider vinegar
  • 1 lemon, juice
  • 2 tsp sambal oelek
  • salt to taste
Garlic Croutons
  • 4 bread slices
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • salt to taste
  • 20 g parsley, finely chopped

Instructions

  • Cook the bulgur according to package instructions.
  • Meanwhile, prepare the dressing by adding all ingredients (olive oil, apple cider vinegar, lemon, sambal oelek and salt) to a small bowl and mix until well combined. Set aside.
  • Heat a skillet with oil to medium-high heat. Add the Stacky's and cook until they get a crisp surface, about 5 minutes. Set aside.
  • Mix parsley, garlic, salt and olive oil in a bowl. Cut the bread slices into cubes, before adding to the bowl and turning in the garlic oil. Heat a skillet to a medium-high temperature and fry the bread until golden on both sides, around 8-10 min.
  • Add almond and broccoli to the cooked bulgur, stirring until well combined.
  • To assemble, evenly divided greens, broccoli/bulgur, Stacky's pieces, garlic croutons and dressing into bowls.
