Spicy Broccoli Bowl With Garlic Croutons
Nutty, flavourful and filling, here comes the perfect bowl to keep on repeat.

Ingredients
Dressing
- 1/4 cups olive oil
- 2 tbsp apple cider vinegar
- 1 lemon, juice
- 2 tsp sambal oelek
- salt to taste
Garlic Croutons
- 4 bread slices
- 2 tbsp olive oil
- 4 garlic cloves, minced
- salt to taste
- 20 g parsley, finely chopped
Other
- 2 Stacky's Hot & Spicy, Cubed
- 2 tbsp olive oil
- 1/2 cups bulgur
- 250 g broccoli, cut in small florets
- 50 g roasted almonds
- 70 g greens of choice
Instructions
- Cook the bulgur according to package instructions.
- Meanwhile, prepare the dressing by adding all ingredients (olive oil, apple cider vinegar, lemon, sambal oelek and salt) to a small bowl and mix until well combined. Set aside.
- Heat a skillet with oil to medium-high heat. Add the Stacky's and cook until they get a crisp surface, about 5 minutes. Set aside.
- Mix parsley, garlic, salt and olive oil in a bowl. Cut the bread slices into cubes, before adding to the bowl and turning in the garlic oil. Heat a skillet to a medium-high temperature and fry the bread until golden on both sides, around 8-10 min.
- Add almond and broccoli to the cooked bulgur, stirring until well combined.
- To assemble, evenly divided greens, broccoli/bulgur, Stacky's pieces, garlic croutons and dressing into bowls.
