SPINACH FETA SPAGHETTI
This spaghetti it's so simple - it comes together in the time it takes for the spaghetti to cook and contains only a few ingredients.

Ingredients
Pasta
- 500 g Spaghetti
- 1 tbsp olive oil
- 5 garlic cloves, minced
- 200 g spinach, roughly chopped
- 200 g plant-based feta cheese
- 1 cup reserved pasta water
- salt and pepper to taste
Instructions
- Start by cooking the spaghetti according to package instructions.
- Heat a skillet with oil to medium high heat and add the garlic. After a minute and two, add the spinach and cook until wilted.
- Add 2/3 of the plant feta cheese along with the pasta water to the skillet and leave to simmer until the plant feta has melted and the sauce has thickens. Adjust with salt and pepper.
- Add the spaghetti and toss until well combined. Top with more plant feta before serving.
