Stacky’s Quinoa Bowl With Curry Dressing
This tahini curry dressing is perfectly creamy and spicy, binding together this dish to a delicious and easy to make bowl.

This recipe goes well to meal prep.

Ingredients
Dressing
- 3/4 cups tahini
- 1/2 cups water
- 1 tbsp curry powder
- 2 garlic cloves, minced
- 1 tbsp syrup
- salt to taste
Salad
- 2 cups quinoa
- 200 g spinach, roughly chopped
- 1 red pepper, cubed
- 1 green pepper, cubed
- 1 cucumber, cubed
Stacky's
- 230 g Stacky’s, cubed
- 1 tbsp neutral oil
- salt and pepper to taste
Instructions
- Start by cooking the quinoa according to package instructions.
- Meanwhile, heat a skillet with oil to medium-high heat. Add the Stacky’s to the pan and let fry until they turn crispy on the outside, about 6 minutes, stir occasionally. Take the pan off the heat and set aside.
- Make the dressing by combining all dressing ingredients (tahini, water, curry, garlic, syrup and salt) in a small bowl, mix until well combine.
- To assemble the bowl, divide all ingredients (quinoa, spinach, red pepper, green pepper, cucumber and Stacky’s) equally into bowls. Serve along with curry dressing.
