Sweet Corn Carbonara

Let sweet corn shine in this updated version of a classic carbonara. Creamy, delicious and easy to make - the perfect go to dish.
SERVINGS:
Ingredients
Pasta
- 300 g Spaghetti
 - 1 tbsp neutral oil
 - 2 yellow onions, finely chopped
 - 1 tsp paprika powder
 - 1 1/4 cups plant based cream
 - 2 tsp vegetable broth powder
 - 460 g sweet corn, drained
 - 230 g chickpeas, drained and rinsed
 - 1/2 cups reserved pasta water
 - salt and pepper to taste
 
Topping
- 50 g plant based parmesan
 
Instructions
- Start by cooking the pasta according to package instructions.
 - Heat a deep skillet with oil to medium high heat and add the onion cooking until fragrant along with the paprika powder.
 - Pour in the plant cream and broth powder along with the corn and chickpeas and leave to simmer for a few minutes.
 - Add the pasta along with some pasta water and let sit on low heat until sauce gets creamy.
 - Adjust seasoning with salt and pepper and top with plant parmesan before serving.
