Sweet Corn Carbonara

Let sweet corn shine in this updated version of a classic carbonara. Creamy, delicious and easy to make - the perfect go to dish.

Ingredients

Pasta
  • 300 g Spaghetti
  • 1 tbsp neutral oil
  • 2 yellow onions, finely chopped
  • 1 tsp paprika powder
  • 1 1/4 cups plant based cream
  • 2 tsp vegetable broth powder
  • 460 g sweet corn, drained
  • 230 g chickpeas, drained and rinsed
  • 1/2 cups reserved pasta water
  • salt and pepper to taste
Topping
  • 50 g plant based parmesan

Instructions

  • Start by cooking the pasta according to package instructions.
  • Heat a deep skillet with oil to medium high heat and add the onion cooking until fragrant along with the paprika powder.
  • Pour in the plant cream and broth powder along with the corn and chickpeas and leave to simmer for a few minutes.
  • Add the pasta along with some pasta water and let sit on low heat until sauce gets creamy.
  • Adjust seasoning with salt and pepper and top with plant parmesan before serving.
