Sweet Potato Peanut Soup

This creamy sweet potato soup with a touch of peanut butter is the best comfort food. It’s rich in flavour with smooth texture and delicious nutty flavour.

- 600 g sweet potato, cubed
- 1 yellow onion, roughly chopped
- 1 tbsp coconut oil
- 3 garlic cloves, roughly chopped
- 1 tsp ginger powder
- 1 tsp turmeric powder
- 1/2 tsp chili powder
- 2 cups vegetable broth
- 200 ml coconut milk
- 2 tsp soy sauce
- 2 tbsp peanut butter
- salt and pepper to taste
Instructions
- Peel and cut the sweet potatoes into small cubes.
- Heat a large pot with the coconut oil to medium heat. Add the onion and garlic and cook until slightly browned.
- Add ginger, turmeric and chili, stir and cook for another minute to infuse the flavours. Then add the cubed sweet potato and sauté on medium heat for 2 minutes.
- Add the broth, coconut milk, soy sauce, salt and pepper. Bring to a boil, then reduce heat to low and let simmer for about 12-15 minutes or until the sweet potato is soft.
- Pour into a blender and add the peanut butter. Blend on high speed until perfectly smooth and creamy. If the soup is too thick, add a little warm water and blend until you get the desired consistency.
- Serve warm, garnished with roasted peanuts, chopped parsley, and coconut milk or any of your favorite toppings.
