Thai Curry Lentil Soup

Using pre cooked lentils has this soup ready in no time - yet it’s packed with flavour. A family favourite, that you’re gonna wanna make on repeat.

- 460 g lentils, drained and rinsed
- 1 tbsp coconut oil
- 2 leeks, thinly sliced
- 4 garlic cloves, finely chopped
- 1 tbsp ginger, finely chopped
- 2 tbsp garam masala
- 1 red curry paste
- 800 ml vegetable broth
- 400 ml coconut milk
- 200 g spinach, roughly chopped
- 1 lime, juice
Instructions
- Heat a large pot with coconut oil to medium high heat. Add the leek and cook until fragrant.
- Add garlic, ginger, garam masala and red curry paste and cook for another minute, careful not to burn the spices.
- Pour in vegetable broth, coconut milk, spinach and lentils and bring to a boil before leaving to simmer until spinach has wilted.
- Finish by squeezing in the lime juice.
