Vegan Burger With Jalapeño Dressing And Roasted Corn
Roasted corn, fresh avocado and jalapeño dressing come together for the best burger ever. These burgers are simply perfection.

Ingredients
Dressing
- 1/2 cup plant-based mayonnaise
- 1 lime, juice
- 1/2 jalapeño, finely chopped
- 1 tsp garlic powder
- 1 handful of fresh basil + extra for garnish
Roasted Corn
- 140 g corn
- 1 tbsp neutral oil
- salt to taste
Other
- 4 stacky's block
- 1 tbsp neutral oil
- salt and pepper to taste
- 4 hamburger buns
- 1 yellow onion, finely chopped
- 2 avocados, sliced
- 4 slices plant-based mozzarella cheese
Instructions
- Start by making the dressing. To a blender, add plant mayonnaise, lime juice, garlic powder and basil and mix until smooth. Once smooth gently fold in the chopped jalapeño.
- Heat a skillet with oil to medium-high heat. Add corn and cook until corn starts to brown, stirring occasionally, about 10 minutes. Set aside.
- This step is optional: fry the buns until lightly toasted.
- Heat a skillet with oil to medium heat. Add the stacky’s to the skillet and fry until they turn dark brown, around 5 min on each side. Once almost cooked through, add a slice of cheese on each stacky.
- Assemble the burgers, by combining the patties, jalapeño dressing, roasted corn, onion and avocado to the burger buns. (I build them like this: bun, dressing, onion, patties, cheese, corn, avocado, dressing, basil, bun).
