Vegan Cranberry Cookies With White Chocolate
You’ll love these cranberry cookies with white chocolate. they’re wonderfully chewy, and the classic pairing is perfect as a holiday trait or anytime throughout the year. Recipe makes about 20 cookies.

- 75 g dried cranberries
- 100 g plant-based white chocolate, roughly chopped
- 180 g flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 95 g brown sugar
- 2 tsp vanilla sugar
- 20 g syrup
- 120 g plant-based butter, cubed
Instructions
- Mix all dry ingredients (flour, baking soda, salt, brown sugar, and vanilla sugar) in a large mixing bowl until well combined. Add plant butter and syrup, and mix until it forms a dough. Add in the cranberries and white chocolate, and mix until evenly spread out in the dough.
- Form the dough into small balls (30 g each) and place in the fridge for 30 minutes.
- Preheat the oven to 180 degrees celsius and prepare two large baking sheets with parchment paper.
- Place the cookie dough balls on the parchment papper, making sure to leave enough space in-between, recommended to bake about 10 cookies on each sheet. Bake in the middle of the oven for 12-15 minutes, or until slightly golden.
