Vegan Kale Pesto With Pumpkin Seeds
If you find yourself with extra kale after creating a recipe this nutrient rich and earthy kale pesto is for you. It’s versatile and can be used as a dip, spread or sauce.

Ingredients
Pesto
- 60 g kale, chopped
- 60 g pumpkin seeds
- 40 g plant-based parmesan
- 3 garlic cloves
- 100 ml olive oil
- 1 tbsp lemon juice
- salt and pepper to taste
Instructions
- Add all ingredients (kale, pumpkin seeds, plant-based parmesan, garlic, olive oil, lemon juice, salt and pepper) to a blender and mix until you reach desired consistency.
