Vegan Lemon Tortellini Salad
This Lemon Tortellini Salad is made with fresh greens tossed in a lemony vinaigrette dressing. It’s done in no time and will for sure be a new pasta favorite.

Ingredients
Dressing
- 1 lemon, zest + juice
- 4 tbsp olive oil
- 1 tbsp white vine vinegar
- 2 tsp dijon mustard
- 50 g plant-based parmesan
- salt and pepper to taste
Salad
- 150 g mixed greens
- 300 g plant-based tortellini
- 60 g walnuts, roughly chopped
Instructions
- Start by cooking the tortellini according to package instructions.
- In a small bowl, prepare the dressing by adding all ingredients (lemon, olive oil, vinegar, dijon, plant parmesan, salt and pepper) and mix until combined. Set a Side.
- In a large bowl, add all salad ingredients (greens, tortellini and walnuts) and pour over the dressing. Toss everything gently to combine.
