Vegan Mushroom Quinoa Burger
If you are to make one veggie burger recipe, it has to be this one. The burgers have a deep flavour and wonderful texture.

Ingredients

- 100 g mushrooms
- 1 tbsp olive oil
- 1 yellow onion, finely chopped
- 2 garlic cloves, finely chopped
- 1 tbsp paprika
- 1/2 tbsp ground black pepper
- 2 tbsp tomato paste
- 2 tbsp soy sauce
- salt to taste
- 1/2 cups cooked, quinoa
- 1/4 cups flour
- 2 tbsp flax meal
- 40 g walnuts
- 1 1/2 cups puffed quinoa
dijon mayonnaise
- 1 cups plant-based mayonnaise
- 3 tbsp dijon mustard
Other
- 1/2 batch pickled red onion
- 100 g lettuce, roughly chopped
- 4 burger buns
Instructions
- Preheat the oven to 220 degrees Celsius.
- If not already cooked, cook the quinoa according to package instructions.
- Heat a skillet with olive oil to medium heat. Add the onion and cook until soft, about 3 minute. Add the mushrooms, garlic, soy sauce, tomato pure, pepper, paprika and salt, and cook until mushrooms are soft and browned, about 7 minutes, stirring occasionally.
- In a food processor, combine the sautéed mushrooms, walnuts, chia seeds, quinoa, and flour. Pulse until just combined (the mixture should hold together when pinched, but it should still have some texture).
- Form into 4 patties. Cover each patty with puffed quinoa before placing them on a baking sheet lined with parchment paper and bake in the middle of oven until golden brown, about 25 minutes.
- While the patties are baking, make the dijon mayonnaise by combining dijon mustard and mayonnaise in a small bowl and mix until well combined.
- If preferred, toast the burger buns.
- When the patties has finished baking, assemble the burger by layering all ingredients within the bun (bread, mayo, lettuce, patty, pickle onion, mayo, bread).
