Vegan Red Pepper Pasta With Basil Bread Crumbs
This pasta is coated in a rich and creamy roasted pepper sauce and topped with a herby bread crumb. It's bold with gourmet flavors, but still easy to make.

Ingredients
Sauce
- 100 g walnuts
- 300 g red peppers, roasted
- 3 garlic cloves
- 1 lemon, juice
- 2 tsp paprika
- 100 ml olive oil
- 150 ml reserved pasta water
- salt and pepper to taste
Basil Bread Crumbs
- 2 slices white bread
- 4 tbsp fresh basil, chopped
- 1 lemon, zest
- 1/2 tsp chili flakes
- 1/2 tsp salt

- 500 g pasta
Instructions
- Preheat the oven to 175 degrees celsius. Place bread slices on a rimmed baking sheet. Toast in the oven until golden, about 10 minutes, flipping the bread slices over halfway through. Allow to cool a bit.
- Cook the pasta according to package instructions. Before draining, reserve 150 ml of pasta water.
- While the pasta is cooking make the red pepper sauce. Add all sauce ingredients (walnuts, roasted red peppers, garlic, lemon juice, paprika, olive oil and pasta water) to a food processor and blend until smooth and thick. Season with salt and pepper to taste.
- Make the herb bread crumbs by tearing the toasted bread into small pieces. Add them to a food processor and pulse repeatedly until you get bread crumbs.
- In a small bowl, add the bread crumbs, lemon zest, chopped basil chili flakes and salt. Stir well to combine.
- Assemble the pasta by tossing the pasta with the red pepper sauce until well coated, then topp with bread crumb.
