Vegan Sun-dried Tomato Pesto
This Sun-dried tomato pesto is easy to make. It's rich, creamy, nutty, and packed with the sweet and savoury tones. The pesto is excellent as a pasta sauce, dip, or spread in a sandwich. It will add character and flavour to any dish.

Ingredients
Pesto
- 150 g sun-dried tomatoes
- 50 g almonds, blanched
- 50 g plant-based parmesan, grated
- 100 ml olive oil
- 1 garlic clove
- salt and pepper to taste
Instructions
- Add all ingredients (sun-dried tomatoes, almonds, plant parmesan, olive oil, garlic, salt and pepper) to a food processor and mix until you reach desired consistency.
