Vegan Sun-dried Tomato Pesto Panini
This sun-dried tomato pesto panini is easy to put together and bold with flavour. The sandwich makes an incredibly option for busy weeknights, or why not enjoy it as a spectacular breakfast.

Ingredients
Sandwich
- 1/2 cup sun-dried tomato pesto
- 8 slices bread
- 100 g arugula
- 2 tomatoes, thinly sliced
- salt and pepper to taste
Instructions
- Start by spreading sun-dried tomato pesto to one side of each bread slice.
- To halve of the bread slices add arugula, tomato slices and season with salt and pepper. Complete the sandwich by adding a bread slice on top, pesto spread side facing down.
- Place the sandwich in a panini press or grill and press until golden brown, about 3-5 minutes.
