WARM APPLE SALAD WITH MUSTARD DRESSING
A warming salad, that is perfect for colder winter days.

Ingredients
Salad
- 2 tbsp plant-based butter
- 3 red apples
- 2 Stacky's original
- 3 tbsp sunflower seeds
- 200 g black kale
Grains
- 1 cups grains
- 4 bay leaves
- 2 cups vegetable broth
Dressing
- 1/2 olive oil
- 2 tbsp grain mustard
- 1 tbsp apple cider vinegar
- 3 tbsp water
- salt and pepper to taste
Instructions
- Start by cooking the grains in vegetable broth with bay leaves until grain is “al dente”.
- While the grain is cooking, heat a skillet with plant butter to medium high heat. Cut Stacky’s into small pieces and fry until they get a crispy surface.
- Split, core and cut the apples into wedges. Heat the same skillet as before with more plant butter to medium high heat and add the apples. Leave to cook until they have a nice golden color on both sides.
- Mix tighter all ingredients for the dressing (olive oil, mustard, apple cider vinegar, water, salt and pepper) in a small bowl. Whisk until well combined.
- Cut the steam off the black kale and ripe into smaller pieces.
- Add all ingredients (grains, Stacky’s, apple, black kale, sunflower seeds and dressing) to a large bowl. Toss until combined and serve warm.
