White Bean Enchiladas With Tomatillo Salsa
White beans, jalapeño, sour cream and tomatillos salsa, nothing else needs to be said, this enchilada recipe is so good.

Ingredients
Filling
- 1 tbsp neutral oil
- 1 yellow onion, finely chopped
- 6 garlic cloves, minced
- 3 green onions, sliced
- 1 jalapeño, finely chopped
- 460 g white beans, strained and rinsed
- 1 cups sour cream
- 1/2 cups tomatillo salsa
- salt to taste
Other
- 8 large tortillas
- 1/2 cups sour cream
- 1 jalapeño, sliced
- 2 avocado, cubed
- 1 green onion, sliced
Instructions
- Preheat the oven to 225 degrees celsius.
- Heat a medium skillet with oil to medium-low heat. Add onion, garlic, green onion and cook until soft, about 2-3 minutes.
- Add jalapeño, beans, sour cream, tomatillo salsa and salt. Mix well and cover. Simmer on low heat until creamy, about 10 minutes.
- Spread oil in the bottom of a baking dish before fill each tortilla with white bean filling. Roll the tortillas and place seam side down in the prepared baking dish.
- Bake in the middle of the oven until golden, about 20-30 minutes. Remove from oven and top with jalapeño, sour cream, avocado and green onion.
