White Bean Salad On Creamy Tofu Spread

Try this incredibly bean salad served on top of a creamy tofu spread. Coated with olive oil, salt, and spices, this salad becomes extra tasty in no time.

Tips:

Serve along with toasted sour dough.

SERVINGS:

Ingredients

Bean Salad
  • 460 g white beans, drained and rinsed
  • 1 cucumber, halved and thinly sliced
  • 2 red onion, finely chopped
  • 1/4 cups olive oil
  • 3 tbsp red wine vinegar
  • 2 tsp sumac
  • 1 tsp dried oregano
  • 1 tsp agave syrup
  • salt to taste
Tofu Spread
  • 400 g firm tofu
  • 5 tbsp lemon juice
  • 1/4 cups tahini 
  • 3 tbsp olive oil
  • salt to taste

Instructions

  • To a bowl, add all ingredients (white beans, cucumber, red onion, olive oil, red wine vinegar, sumac, dried oregano, syrup and salt). Mix together until well combined. Set a side.
  • Make the spread by squeeze the tofu with your hands to remove some of the water from it.
  • Add all remaining ingredients (tofu, lemon juice, tahini, olive oil, and salt) to a blender and blend until you have a smooth cream.
  • Adjust with salt and lemon to taste.
  • To serve, spread the tofu cream onto plates and top with the bean salad.
