White Bean Salad On Creamy Tofu Spread

Try this incredibly bean salad served on top of a creamy tofu spread. Coated with olive oil, salt, and spices, this salad becomes extra tasty in no time.
Tips:
Serve along with toasted sour dough.

Ingredients
Bean Salad
- 460 g white beans, drained and rinsed
- 1 cucumber, halved and thinly sliced
- 2 red onion, finely chopped
- 1/4 cups olive oil
- 3 tbsp red wine vinegar
- 2 tsp sumac
- 1 tsp dried oregano
- 1 tsp agave syrup
- salt to taste
Tofu Spread
- 400 g firm tofu
- 5 tbsp lemon juice
- 1/4 cups tahini
- 3 tbsp olive oil
- salt to taste
Instructions
- To a bowl, add all ingredients (white beans, cucumber, red onion, olive oil, red wine vinegar, sumac, dried oregano, syrup and salt). Mix together until well combined. Set a side.
- Make the spread by squeeze the tofu with your hands to remove some of the water from it.
- Add all remaining ingredients (tofu, lemon juice, tahini, olive oil, and salt) to a blender and blend until you have a smooth cream.
- Adjust with salt and lemon to taste.
- To serve, spread the tofu cream onto plates and top with the bean salad.
